This recipe was one of the few recipes from the Complete Idiot’s Guide to Cooking for Two that I am writing about this month. I made this last year some time, but never wrote about it. I thought this month would be the perfect time as I am talking about the recipe book it came from!
Potato, Onion, and Bacon Frittata
- 1/4 lb bacon, chopped
- 1 cup frozen hash browns
- 1 small onion, diced
- 1 tsp garlic
- 4 large eggs
- 2 TBSP half and half
Directions: (30 minutes total)
- Preheat oven to 425°. Cook bacon according to instructions. Save 2 TBSP of bacon grease and heat over med-high heat in a 10″ skillet.
- Add potatoes and cook about 5 minutes, stirring occasionally. Add onion and garlic, cook for 5 minutes, stirring occasionally. Chop bacon.
- Whisk eggs with half and half and S&P. Add bacon to the skillet and pour in egg mix. Cook for 4 minutes over medium heat.
- Transfer to oven and bake for 10 minutes. Remove immediately with spatula and enjoy!
I think this frittata was a little tastier than the tortilla coming up in two weeks, but it could have been because it was a little bit easier to make. It was really good and I highly recommend you trying it!!
